What if I use fresh brewer’s yeast?

If you are currently using fresh brewer’s yeast and want to replace it with Chenabura Sourdough, the conversion is really simple.

15 g Fresh Yeast = 45 g Chenabura

Multiply the amount of fresh yeast by 3

We still suggest you experiment with the quantities, as they may vary depending on what you’re making.

Package and dosages

500 g package. For bread and pastries (including large leavened products) a dosage of 100 g per kg of flour is recommended; with 500 g of product you can prepare up to 10 kg of dough. For pizza and focaccia a dosage of 30 g per kg of flour is recommended; with 500 g of product you can prepare up to 33 kg of dough.

Reactivation

No need to reactivate it, our dried Sourdough Starter is ready to use.

Dough preparation

Use the sourdough starter in your dough following the indicated proportions.

Rising

Let it rise in a warm place for 2 hours, until it doubles in volume, but you can also use it for long fermentation.

The dough raising mix works very well. Is it normal that the best before date is already in couple months? Bought end of August, best before date 12/2025.
